By way of background: This is tasting notes for wines made as part of the 2006 Chez Ray vintage of frozen grapes from Brehm.  The fermentation process is described here.

Initial review, five years from vintage date , May, 2011: This is
Chez Ray Caldwell Cabernet Sauvignon, Napa, CA, 2006.

In the glass: Medium deep red throughout.

On the nose: Poured cool with a brief decant and swirled vigorously, shows a subtle but sophiscticated blend of mahogany, oak, and taut deep fruit.  From the aroma, seems like this will be restrained, but potentially powerful.

On the palate: The primary elements on the palate are in fact rich and robust on the palate, bringing svelte deep fruit, solid surrounding tannins, and a sweetness that is voluptuous in its elegance.  The finish glides along on sweetness, turning mineral and completely clean as it vanishes.

In summary: Overall, rates five full stars on the five-star Spirit of Wine scale, as good as it gets!

Updated review, two and a half years later, now seven years from vintage date, October, 2013:  Consistent color.  The nose is much more ambitious, confident and aromatic; delivers bold inkiness direct to the brain.  Still wholly sleek and svelte on the palate; big, bold, mellow.
