Pressing 2008 Chez Ray Grapes - Part Two

This weekend I pressed the 2008 Chez Ray merlot, cabernet sauvignon and zinfandel that came from fresh CA grapes. This pressing included several weeks of extended maceration, with the must kept under Saran Wrap. It is an experiment in which I will compare tastes to the same three grapes, fermented in the same way and pressed immediately upon completion of fermentation.

Upon bottling, I'll label these as m8, c8 and z8 when we mix extended maceration and pressed dry grapes; m8p, c8p and z8p when these are pressed dry; and m8e, c8e and z8e when these underwent extended maceration.
