2007 Suisun Valley grapes are percolating

Here the four buckets of 2007 Suisun Valley cabernet and merlot (split between D-254 and BM45 yeasts) are resting under wraps between punch downs. After reaching dryness, they'll be moved to the basement for an extended maceration.

Updated October, 2009: Ultimately - I can't recall when or why - it looks like I blended all four of these buckets together, calling it CM7. Unfortunately, I can't give you a report distinguishing the D-254 from the BM45 yeasts.
