A little assist to nature....


Adding a teaspoon of yeast nutrient and a packet of RC-212 Pasteur Red yeast to each 5 gallon drum will give nature just that little boost it needs to coax some alcohol and tannins out of those tasty-sweet grapes. Five tablespoons of Oakmore oak powder will give a bit of early backbone to the sometimes flabby Lodi must.
